Grandiosa frozen pizza experiment, day #2: Going 5ºC over the recipe temperature and 5 minutes over the recipe time produced a superior crust and a chewier, less watery top layer. Continuing experiment by increasing the time to 7 minutes over the recipe time. Will report back with results later.
Initial findings: Edges are now slightly charred. Flavor and mouthfeel not significantly improved from previous experiment, which seems to have been the sweet spot.
